Oatmeal Pancakes

These take a while to prepare because you must cook the oatmeal first. And since they take longer than usual to cook, there's no chance everyone can sit down together to eat(unless they're zapped in the microwave. Just dole them out in rotation, two to a customer. Eventually the cook gets some, too!

They're kind of creamy inside; really unusual. You can see they are mostly oatmeal, with just a little flour to bind them. The family's favorite pancake!

2 c (one-minute) oatmeal
4 c water
2 c flour
2 t baking powder
2 egg (Eggbeaters are fine)
1 c non-fatevaporated milk (or 1 c water + 3/4 c dry non-fat milk solids)
1/2 c water
3-4 T bacon drippings (well, occasionally - - but usually extra-virgin olive oil)

Cook the 2 c dry oatmeal in the 4 c water. (Use the microwave, if you like, but be sure to use "tall" bowl so it won't all bubble over.)

Mix flour and baking powder. Mix in egg. Add oatmeal, evaporated milk, water, and fat.

Cook on a griddle in normal fashion. Yield: about 20.

I have a recipe for sourdough pancakes. These require a sourdough starter, and they must be begun the night before.
