
Pickled Ginger for Sushi
In my hunt for this, I found some strips of red-tinted stuff in a jar in a grocery store, but that wasn't it. I ended up buying it from a restaurant (not exactly cheap!), so I was happy to find the following recipe. You may be able to find fresh pickled ginger locally if you have a large enough Asian population.
Wipe 1/2 lb. of ginger root with a damp cloth; or scrub in water if it needs it. Sprinkle it with salt and let it sit for 24 hours. The root is whole, at this point.
