Strawberry Preserves

Here are two quick preserves. One's made with frozen berries and the other with canned figs (yes!). Store in the refrigerator because these are not processed with heat.

Quick Strawberry Preserves

3 10-oz. packages of frozen strawberries
3 1/2 c sugar
1 pack Sure-Jell pectin (this is not the same as Jello)

Mix sugar and frozen berries and let thaw. Mix.

Heat Sure-Jell in 3/4 c water. Boil. Pour on berries and stir well for three minutes. Pour in sterilized jars. Store in refrigerator. Yield: 1 qt.

Fake Strawberry Preserves

3 c mashed figs (canned are great for this)
3 c sugar
2 regular packages of strawberry or raspberry Jell-O
2 1/2 t (or 2 or to taste; these preseves are sweet) lemon juice

Boil all about 10 minutes, stirring occasionally. Pour in sterilized jars. Store in refrigerator. Yield: 1 qt.
