Smoker Salt

Rub this salt mixture on your meat, cover, and refrigerate overnight. Smoke the meat the next day. Honey, smoked chicken is so good it'll make you weep! Add baked beans and cole slaw, and you'll be in hog heaven!

The original recipe called for MSG, but I have eliminated that (I'm allergic to it). Also, the orignal version called for celery salt, onion salt, and so on. I have changed those to celery poweder, onion powder, etc. The spice section of any reasonaly-well stocked supermarket should have all these things.

Store at room temperature in a tightly-closed jar (a peanut butter jar is traditional!).

1 c table salt
2 T onion powder
2 T garlic powder
2 T celery powder
2 T paprika
2 T dried dill weed
4 T ground black pepper (the bottled kind)
4 T ground white pepper (or double the black pepper)
4 T white sugar
2 t ground mace
2 t curry powder (commercial stuff is fine for this)
2 t nutmeg
2 t dry mustard

The meat is best when it's salted and refrigerated overnight, but in a pinch you can pat it on just before cooking. Still good!
