Mix sugar and flour. Cut in the oleo. I like a pastry blender but it can be done with two table knives.
Grease (or Pam) an 8x8" square pan.
Bake at 350 degrees for 20 minutes. This is the bottom crust. Don't let it overcook.
2 T lemon juice (I use RealLemon)
1/2 t baking powder
1/4 c powdered sugar
1/4 t salt
more powdered sugar, optional
Mix and pour over cooked crust. Bake 20-25 minutes more. Don't overcook.
May sprinkle top with more powdered sugar. Rub it through a sieve with your fingers to avoid lumps.
Cut into small squares (1x1") while still warm. Store air-tight. Yield: about 32.
