Chewey Noels

I like the corner pieces the best; they have a wonderful combination of the sweet cookie and a little extra salt. I also increase the oleo a little bit (like 3 T) to make sure the top layer is plenty chewey.

2+ T oleo (or butter)
1/2 t salt

Melt butter and salt in 8x8" square baking pan right in the oven (350 degrees or whatever it is while it's pre-heating).

2 eggs
1 t vanilla extract
1 c packed brown sugar
1 c nuts, chopped
1/8 t baking soda
5 T flour (yes, only 5 T)
powdered sugar

Beat eggs and vanilla. Add rest. This can be done by hand with a whisk, which means these cookies are very fast to make because you don't have to drag out your mixer.

Pour batter in pan.

Bake about 20 minutes. Check. Top should be moist but not soupy.

Remove from oven and let set up for 5 minutes. Sprinkle with powdered sugar.

Let set 5 minutes more. Then cut into squares (about 1x1").

Remove from pan an put into an air-tight storage container with waxed paper between layers of cookies, if necessary. Don't put lid on until cookies are completely cooled. Yield: about 32.
