Cream butter until fluffy. Add sugar gradually. Add flour and knead until smooth. (Chill if necessary to keep dough firm; example: if you live in Florida.)
Roll to 1/4" thick on floured board. Cut in shapes with cookie cutters or into squares or rectangles with a sharp knife.
Place on ungreased cookie sheet.
Optional: Beat an eggyolk lightly with 1 T milk, using a fork. Paint this glaze on the cookies before baking.
Bake at 350 degrees for 20-25 minutes. Watch. Should be only delicately browned.
Yield: 3 dozen.
